STEVE GONZALEZ – The Becoming
Executive Chef Steve Gonzalez has made it his mission to bring South Americas dynamic food culture to downtown Toronto.
Being a Cook it wasn't as glorified as it is now like back in the day like people after you told me what cook looked look down upon and it just so happened within like the ten years of me being in it it became cool thing you know and became a time where like we're the new rock stars yeah do you ever feel like your sadness when these kids whatever you pick it on you well for sure for sure good thing for me I was never really violent person yeah like I found other ways the kind of lash out or express myself whether it's sports or cooking mm-hmm I just needed to get away I learned it from a young age to stay away from me right you know had my moments were kind of wrong crowd wrong place wrong time type of thing experience that right and you know covered once in a while what I've got to learn from your mistakes and before but as far as like be racially profiled or or being felt you know any less than the average person yeah I felt that at times but I never said it bothered me yes cuz I knew I had an awful plan of where I wanted to be.
I've dedicated the last 30 years of my life to food to feeding everybody else you know there's times that I forget - you know I've probably seen a quarter of the sunsets that the average person has seen Wow that we stuck in the kitchen you know and sacrifice and I give up a lot of and like have nieces and nephews that I don't know that was cooking you
know I have childhood friends that you know we're still contact here and there but I don't know their kids

I grew up with 6 siblings and a lot of rough times but always managed to see the positive side to things. Being part of this Latino culture helped me over come many hard obstacles I thought I couldn’t over come myself but with the help of my loving and caring family I grew into the Latino I am today. A former fan favorite on Top Chef Canada, the Colombian-Canadian has worked in restaurants for nearly three decades. I'm Steve Gonzalez now what do you do I'm an executive chef or I'm the executive chef at Baro restaurant in Toronto interesting how long have you been the chef for Baro. I've been the chef at Baro for about four years now or even since the beginning I opened it oh really how much preparation and time to that take probably my whole career.
Going back to the beginner and when did you start cooking and how'd you make this into a career inspired to me so I started cooking when I was about 13 years old I started in disparate I was washing the dishes at humans and just hanging out with my friends you know one day I got called up to the big buns and fries and I made the step up and still cooking 32 years later I wanted to prove that that Latin food was more than just tacos and burritos right that there's so much more out there you know nowadays.
I'm really known for my city cheese this is I don't do your traditional thing I take these classic ideas that I make a modern right so I felt like every other food style did it and it's you know it's our turn to do this and I've been doing it now for about seven eight
years I say it's amazing how you brought this new twist and idea this fusion thanks yeah and I love that you mentioned fusion because I don't look at it as fusion mm-hmm this is evolution is evolution of food right when you look at looking Latin America of like Peru there's a lot of Asian influence right so they've created this whole food style right which is like Chifa or Nikkei.

My earliest memories were at 3390 Keele St. There were only a few Latinos in the Keele and Sheppard area, a mostly European dominated neighbourhood in the 80’s and 90’s. We were a few, but we stuck together. We were fearless and stood our ground. We even took our beats, but we earned respect.
If someone needed help you showed up and stood by their side because they were family. The friendships and reputation we made for ourselves still stand today. We are strong resilient people who grew up in the ghetto, the hood or the barrio.
I would not change anything because it’s made me who I am. I am Victor and I am Raised by Latinos

Mauricio Veio was born in Brasil and began training at the age of thirteen under his one and only coach, Master Rafael Cordeiro of Chute Boxe. He is a fully acredited black belt under Master Cordeiro, holds an 6-2 Muay Thai record, and a 11-3 MMA record, fighting from Brasil to Portugal and Japan. He has spent his formative years training with Wanderlei Silva, Anderson Silva, Jorge Patino and many other past and future champions.

Although I do not speak, write, or read in Spanish, I feel very Latino (seeing how I was raised by my mother). Thanks to her I have been able to connect and embrace my Latino roots.

Ecuadorian and Peruvian
I understand Spanish but I don’t speak it that well. Both my grandparents speak to me in Spanish because they tell me it's important to learn and I agree too. I eat Ecuadorian dishes made by my grandmother all the time. I watch her cook because I want to learn how to make the dishes. My grandfather is from Peru and he makes Peruvian dishes which I also like and watch when being made. He tells me stories of him growing up in Peru and being peruvian that I find very interesting. I am Canadian. My mother is russian and my father is Italian, Domincan, Puerto Rican. I have been in touch with my roots since I was a child. Latin dancing has always been a passion of mine. I am starting to experience the Latino culture more and express myself more everyday and learning what it means to be a strong Latina. Thanks to my parents I was raised very strictly yet in a very loving and supporting environment that has made me overcome many typical ignorant Latino stereotypes.
